Like many, if not all, Chinese households, we have a rice cooker. Now that I think about it, it’s the one purchase that my fiancée made for our kitchen without my input. I think he had endured one too many of my attempts to make rice on the stovetop. I have a tendency to burn the bottom while the rest of the rice turns to mush. I now buy white rice by the 30-pound bag and make rice at least once a week. It’s great but I will admit that plain white rice can be a little monotonous. If I’m making a simple Roast Chicken and Asparagus then I’m going to need something super flavorful on the side. This Carrot Rice dish hits the spot. It’s spicy and smoky with a little bit of the sweet carrot. It’s a nice change without much extra work.

Serves: 2-4
Ingredients
  • 2 cups Jasmine Rice (cups according to the rice cooker)
  • 1 cup Chicken Broth or Vegetable Broth
  • Water
  • ½ Onion, finely chopped (about ½ cup)
  • 2 Carrots, grated (about ½ cup)
  • 1 tablespoon Ginger, grated
  • ½ teaspoon Chili Powder
  • ½ teaspoon Cumin
  • ⅛ teaspoon Cayenne
  • 1 tablespoon butter
  • Salt and Pepper, to taste
Instructions
  1. Add the rice to the rice cooker, chicken broth and just enough water to cook the rice according to the rice cooker directions.
  2. Next add the onion, carrots, ginger, chili powder, cumin and cayenne to the rice cooker.
  3. Cook the rice according to the rice cooker instructions.
  4. Once the rice has finished cooking, add the butter and salt and pepper.
  5. Serve immediately.
