Like many, if not all, Chinese households, we have a rice cooker. Now that I think about it, it’s the one purchase that my fiancée made for our kitchen without my input. I think he had endured one too many of my attempts to make rice on the stovetop. I have a tendency to burn the bottom while the rest of the rice turns to mush. I now buy white rice by the 30-pound bag and make rice at least once a week. It’s great but I will admit that plain white rice can be a little monotonous. If I’m making a simple Roast Chicken and Asparagus then I’m going to need something super flavorful on the side. This Carrot Rice dish hits the spot. It’s spicy and smoky with a little bit of the sweet carrot. It’s a nice change without much extra work.

Ingredients
- 2 cups Jasmine Rice (cups according to the rice cooker)
- 1 cup Chicken Broth or Vegetable Broth
- Water
- ½ Onion, finely chopped (about ½ cup)
- 2 Carrots, grated (about ½ cup)
- 1 tablespoon Ginger, grated
- ½ teaspoon Chili Powder
- ½ teaspoon Cumin
- ⅛ teaspoon Cayenne
- 1 tablespoon butter
- Salt and Pepper, to taste
Instructions
- Add the rice to the rice cooker, chicken broth and just enough water to cook the rice according to the rice cooker directions.
- Next add the onion, carrots, ginger, chili powder, cumin and cayenne to the rice cooker.
- Cook the rice according to the rice cooker instructions.
- Once the rice has finished cooking, add the butter and salt and pepper.
- Serve immediately.
